Baked chicken wings!
The iconic cold open that inspired this week’s recipe! In the episode Olja asks Zoe why she added baking powder to the recipe. Of course Zoe couldn’t remember the science-y bits at the time, so here is the in depth answer for all you curious listeners! Baking powder raises the pH of the chicken skin, which draws out moisture and helps make the wings nice and crispy! So there you have it. Enjoy these wings with a coke. —diet Coke!!
Heather’s favorite hot sauce: Palo Alto Firefighter’s Pepper Sauce!
baked chicken wings
ingredients:
3/4c rice flour
1 tbsp baking powder
1 tsp cumin
1 tsp garlic powder
1 tsp salt
1/2 tsp smoked paprika
30 grinds pepper
3 lbs chicken wings, drumsticks and flats
optional:
sour cream
hot sauce
equipment:
parchment paper
Preheat oven to 425F. Line a sheet pan with parchment paper. Combine the flour, spices, salt and pepper in a large bowl, mix well. Working in batches, add chicken wings to the flour mixture. Toss to coat evenly, shake off excess flour mixture, and place chicken wings on pan in a single layer. Bake 30 minutes, flip chicken wings over, and bake another 20 minutes. Baste with any pan juices and cook another 15 minutes, or until golden brown and internal thermometer reads at least 165F. Enjoy with your favorite dipping sauce, and a diet coke.
