The One with Concerning Airport Security and Steak Sliders

Steak sliders!

This recipe inspired by this amazing joke, seen below. Though I fully endorse Joey’s method of hand steak, I thought perhaps the rest of us could use a solution to the age old question: how do I eat steak when there’s no place to sit?? Recipe below!

steak sliders 

1/2 red onion

1/4c + 1 tsp rice vinegar

1 tsp salt, plus more to taste

2 tbsp lime juice

1 tbsp soy sauce

1 clove garlic, crushed

2 tbsp vegetable oil

1lb flat iron steak (or skirt, or flank)

1 pint cherry tomatoes

pinch red pepper flakes

6 slider buns or rolls

stone ground mustard

Thinly slice the onion and place in a small bowl or jar. Add 1/4 c rice vinegar and 1 tsp salt. Mix to combine and set aside.

Combine lime juice, soy sauce, and garlic in a small bowl and slather mixture on both sides of the steak. Heat a heavy skillet over medium high heat and add the vegetable oil. When the pan is hot hot and the oil shimmers add the steak. Cook 4-5 minutes on each side for medium rare. Remove the steak to a plate, cover with foil, and let rest 10 minutes. Add the tomatoes to the steak pan. Cook, shaking the pan occasionally, for about 5 minutes, or until the tomatoes burst. Turn off the heat, add a tsp of rice vinegar, a pinch of salt, and a pinch of red pepper flakes. Mix with a fork, mashing lightly to make a chunky sauce.

Split the slider rolls and warm in a 300F oven if desired. Dab one side of the rolls with stone ground mustard. Slice the steak thinly, against the grain. Divide steak among rolls, top each with cherry tomatoes and a few slices of marinated onions. Close slider rolls and enjoy!
