The One with You and I and Grandma’s 3D Muffins

Grandma’s 3D Muffins

Put on your 3D glasses for this one! Phoebe’s Grandma’s final words were “Ok, dear, you go get the eggs and I’m gonna get the yogurt, and we’ll meet at the checkout counter.” I like to think Phoebe and Grandma Francis were picking up ingredients for these muffins. Francis loved things that call for 3D glasses, as we see when the bereaved all don said glasses at her funeral. With that in mind, I filled these muffins with blueberries and raspberries to represent the red and blue lenses. These muffins are also a nod to 90s café culture, where jumbo bran muffins reigned supreme. I think Francis would approve.

Grandma’s 3D Muffins

2 eggs

1 cup sugar

1 tsp vanilla

1 cup greek yogurt

½ cup extra virgin olive oil

Zest of one lemon

⅓ cup lemon juice

1 tsp salt

1 ¼ cup flour

1 cup wheat bran, oat bran, or wheat germ

3 tsp baking powder

1 ½ cup frozen raspberries

1 ½ cup frozen blueberries

Turbinado sugar for dusting


Preheat oven to 350F. Line a jumbo (or regular) muffin tin with paper liners. 

Whisk eggs and sugar together in a large bowl. Add vanilla, greek yogurt, olive oil, lemon zest and juice, whisking after each addition until combined. Add salt, flour, bran, and baking powder, whisking thoroughly to combine. Fold in frozen fruit. Spoon batter into jumbo (or regular) muffin cups, filling nearly to the top (these don’t rise much during baking), and sprinkle the top with turbinado sugar. Bake until golden brown on top and a toothpick inserted into the center of the muffin comes out clean. This will take about 25-40 minutes for jumbo muffins and 15-20 minutes for regular muffins. Enjoy warm muffins, perhaps split open with a pat of butter. 3D glasses optional.
